I love experiments in the kitchen and decided that I needed to look and try to cook wafer rolls according to other recipes, for example, make kefir dough. I can safely say that the experiment was a success, I really liked them. Tender but crispy at the same time. I understand more and more that baking on kefir is becoming one of my favorites.

By the way, in the recipe I indicate the full rate of products.   • Any thick cream is suitable for filling tubes or horns. It can be oily, from boiled condensed milk, protein-like meringue. Also, the tubes can be stuffed with thick jam or marmalade. For tubes without sugar, pate, soft cheese, curd mass with herbs and garlic are suitable as a filling.
  • The filling can be put into the tubes with a coffee spoon, but this must be done on both sides.

  • Soften butter in the amount of 100 g from the state of thick sour cream.
  • Crack 3 raw eggs with a fork until smooth.
  • Mix butter and egg mass and add 100 g of granulated sugar to them. Stir.
  • Mix 1 sachet of vanilla sugar into 100 g of flour.
  • Enter the flour into the prepared mass of eggs, butter and sugar. Mix the dough with a hand whisk or blender.

  • Beat 2 eggs and 100 g of sugar until foamy.
  • Pour milk (1 cup) into beaten eggs and put flour (from 1.5 to 2 cups). Mix the dough until smooth.
  • Pour 2 tablespoons of odorless vegetable oil into the dough.

In any described dough, add 2-3 tablespoons of cocoa powder.

There are a huge variety of creams that are suitable for filling wafer rolls with them. You can cook, or any other recipe that you love the most.

Flour - 2 cups

1 tsp baking powder
1 tsp soda
1/2 tsp salt
2 cups of kefir
1/3 cup vegetable oil

0.5 l milk
1/2 pack margarine
1 egg
250 g sugar (I take less - somewhere around 200 g)
vanillin


Melt margarine.
Add egg, sugar, vanillin, mix with a mixer. Then there is a trick: to make the dough without lumps, I first add flour and stir, and then add milk a little bit.
If the dough becomes liquid - again flour, diluted with milk. And so, until about 0.5 liters of milk is used up.
The dough should turn out like thick sour cream (but not rustic, where the spoon is).


8. WAFERS ON CONDENSED WHITE
margarine 200 g;
condensed milk 1 can;
eggs 2 pcs;
starch 1 glass;
flour 1 glass;
soda (1/3 tsp), slaked with vinegar.
Mash the margarine, mix all the ingredients, the dough should not be liquid. Put a little dough on the base of the waffle iron, make sure that the waffles do not burn.
Before the first waffle, grease the waffle iron (both surfaces), then no oil is needed. To make the waffles the same color, I follow the clock with a second hand. As soon as the waffle is ready, I twist it into a tube. I tried different recipes, but I didn’t like everything, if you don’t eat it at once, the waffles become soft, and these remain crispy for a long time.


9. WAFERS WITH SOUR CREAM
Eggs - 5 pcs.
Sugar - 5 tbsp. l
Butter - 1 tbsp. l
Sour cream - 1/2 cup
Flour - 1 cup
Separate the whites from the yolks and refrigerate. Grind the yolks with sugar until white, add melted butter (not hot), sour cream to them; mix, add flour and stir well until a homogeneous mass is obtained. Add cooled proteins whipped into a thick foam into this mass and gently mix from top to bottom.


10. CREAMY WAFERS
butter - 125 g
sugar - 3-4 tbsp. spoons
flour - 1/2 cup
eggs - 4 pcs
cream - 4 tbsp. spoons
water - 1 glass
vanilla sugar - to taste
Cooking method
Mix softened butter with sugar and vanilla sugar.
Divide the eggs into whites and yolks.
Beat egg yolks with salt until smooth and transfer to softened butter with sugar.
Beat the resulting mass with a mixer until foam forms.
Mix the sifted flour with soda and a little water. Then transfer to the egg-butter mixture and mix everything thoroughly.
Then pour in the remaining water, cream and mix until smooth.
Beat the cooled egg whites until fluffy, carefully fold into the batter and fold gently with a wooden spatula.
Fry the waffles in a preheated electric waffle iron for 2-5 minutes.


11. WAFERS "MOM"
2 cups (250 g) flour
1 tsp baking powder
2 tbsp. l. Sahara
1 tsp salt
2 glasses of milk
2 eggs
2 tbsp. l. vegetable oil
Cooking method
1. In a large bowl, mix flour, baking powder, salt and sugar. Add milk, eggs and vegetable oil, mix thoroughly.
2. Lightly oil the waffle iron or spray with oil spray. Pour the desired amount of batter into the hot waffle iron. Bake until waffles are golden brown.


12. WAFFLES "Royal"
200 g butter
75 g sugar (1/3 cup)
1 sachet of vanilla sugar
a pinch of salt
6 eggs
300 g flour (2 cups)
2 tsp baking powder
200 ml cream
some sparkling water
oil for greasing the waffle iron

1. Beat softened butter, sugar, vanilla powder until fluffy. Add eggs one at a time while continuing to beat.
2. Mix flour and baking powder. Add to the egg-butter mixture alternately with the cream, in small portions. At the end, add a little mineral water with gas to make a dough of thick sour cream consistency, a little thicker than for pancakes.


13. YOGHURT WAFERS
3 eggs
1.5 cups (375g) vanilla or fruit yogurt
1.25 cups (150 g) flour
2 tsp baking powder
1 tsp soda
1/2 tsp salt
100 g butter, melted
Cooking method
1. Preheat the waffle iron according to the manufacturer's instructions. Whisk eggs in a large bowl, then add yogurt, flour, baking powder, baking soda, salt, melted butter, mixing until smooth.
2. Pour a small amount of batter into the hot waffle iron. The dough will expand slightly under the lid. Bake until no more steam comes out, about 5 minutes.


14. GENTLE WAFFLES WITH COTTAGE CHEESE
3 eggs
0.5 glass of milk
150 g cottage cheese
3 art. l. Sahara
3 art. l. butter
1/4 tsp salt
1 cup flour
1/2 tsp baking powder

1. Separate the whites and yolks.
2. Beat the protein to stable peaks.
3. Mix flour with salt and baking powder.
4. Beat the yolk with sugar, add melted butter, milk and cottage cheese.
5. Mix the yolk mixture with flour.
6. Gently add egg whites, stirring from top to bottom

15. WAFERS FOR BREAKFAST
2 1/2 cups flour
200 g butter
3 eggs
1/2 cup sugar
1 tsp vanilla extract
a pinch of salt

17. LIEGE WAFFLE
Flour - 400 g
Egg - 2 pcs
Milk - 140 ml
Sugar (large) - 180 g
Butter - 200 g
Yeast (dry) - 1.5 tsp
Vanilla sugar - 1 packet.
Salt - 0.2 tsp
Warm up half of the milk / in the microwave or on the stove /. Add yeast, cover and leave to rise for 10 minutes.
Break 2 eggs into the remaining milk, add salt, beat everything well with a whisk.
In a deep bowl, mix flour with butter. Add sugar, milk with yeast and milk with eggs, mix well with a wooden spoon or mixer on low speed until a sticky dough forms. Cover and leave to rise for 30 minutes.
On a well-floured work surface, divide the dough into 12 pieces.
Roll each part into a ball, roll in large pieces of sugar.


18. VIENNA WAFFLES.
Sugar (more if you want sweeter) - 100 g
Flour - 350 g
Milk - 1 stack.
Butter - 200 g
Egg - 3 pcs
Lemon juice - 1 tbsp. l.
Baking powder - 2 tsp
Grind butter with sugar, add milk and eggs, then add flour, baking powder and lemon juice, mix everything.
The dough is ready!
Gently spoon the batter onto the waffle iron and bake for 3-5 minutes until golden brown.


19. COTTAGE WAFFLES "GOLDEN"
Cottage cheese (low fat) - 125 g
Butter (melted) - 60 g
Sugar - 3 tbsp. l.
Lemon zest (grated, 1 lemon)
Flour - 150 g
Milk - 1/8 l
Egg - 3 pcs
Mix cottage cheese with melted butter, add sugar and lemon zest. Gradually add flour and milk. Separate the whites from the yolks and add the yolks to the dough.
Beat egg whites until very stiff and carefully fold into batter. Bake waffles until golden brown.


20. CORN WAFERS
Corn flour - 150 g
Chicken egg - 2 pcs
Butter - 50 g
Milk - 200 ml
Liquid honey - 4 tbsp. l.
chopped almonds (a little)
Baking powder - 1 tsp
Rum (optional) - 1 tsp
From corn flour, eggs, butter (melt), milk, baking powder, honey and rum (if you add), knead the dough and let it brew for 10-15 minutes.
Add almonds and mix.
We heat the waffle iron (if necessary, grease with oil) and pour the dough.
Bake until golden yellow.


21. STARCH WAFERS
Butter (melted) - 100 g
Granulated sugar - 150 g
Chicken egg - 3 pcs
Wheat flour - 100 g
Starch - 100 g
Baking powder for dough - 1 tsp.
Mix melted butter with sugar
Add eggs, beat with a mixer
Add flour, starch and baking powder. The dough becomes thick. Let it sit for 30 minutes
Spread on a greased waffle iron 1 tbsp. l. test
Bake waffles until golden brown.

22. COCONUT WAFERS
Butter (margarine) - 150 g
Flour - 300 g
Coconut shavings - 100 g
Sugar - 100 g
Vanillin - 1 sachet.
Egg - 3 pcs
Baking powder - 1.5 tsp
Salt (a pinch)
Melt the butter, add sugar and vanilla, mix with a mixer. Add eggs one at a time. We mix everything.
We add salt and coconut flakes to our mixture. We mix.
Now add flour mixed with baking powder. Mix everything thoroughly.
We heat up our electric waffle iron, spread the dough.


23. WAFFLE "GLAKOMKA"
Egg - 4 pcs
Sour cream - 5 tbsp. l.
Flour - 4 tbsp. l.
Starch - 2 tbsp. l.
Sugar - 0.5 stack.
Salt (a pinch)
Break the eggs into a bowl.
Add sugar and stir until sugar dissolves.
Add sour cream and mix with a whisk.
Add flour and starch, alternately, stirring with a whisk until smooth.
Heat the waffle iron (you can also bake in the oven on parchment, spreading 1 tbsp at a distance).
Pour 1 tbsp. l. into the mold and immediately press down with a lid.


24. CRISPY WAFFLES.
Chicken egg - 4 pcs
Margarine - 200 g
Sugar - 1 stack.
Powdered sugar - 1 stack.
Flour - 1.5 stack.
Vanillin
Melt margarine, cool a little, add sugar, powdered sugar, eggs, vanillin, flour. The dough should be like sour cream. Put a tablespoon in a waffle iron and bake until the desired color. Twist immediately hot, otherwise they will break.


25. RHINE WAFFLE.
Butter - 125 g
Sugar - 0.5 stack.
Flour - 1.5 stack.
Egg - 2 pcs
Cloves (ground) - 2 g
Cinnamon (ground) - 2 g
Lemon zest (grated, 1 lemon)
First, beat the butter (room temperature), gradually add sugar, egg yolks, ground cloves, cinnamon and lemon zest to it. Pour the sifted flour in portions into the whipped butter and stir constantly. Pour the beaten egg whites into the well-mixed dough and mix well again. Bake until done.


26. LEAN WAFERS
Granulated sugar - 0.5 stack.
Sunflower oil - 1 tbsp. l.
Wheat flour - 1 stack.
Water - 2/3 stack.
Baking soda (at the tip of a knife)
Mix flour with sugar and soda, pour in water and sunflower oil - you get a dough like on pancakes.
Bake like regular waffles.
The number of components is given for 1 serving (approximately 10 thin wafers).

Puff pastry - 1 pack.
Flour (A little)

250 gr. mayonnaise, 3 eggs, 200 gr. margarine,
1 cup starch 1.5 cups sugar
1 tsp soda quenched with vinegar, 3 cups flour.
Mix everything and bake waffles until golden brown.


30. WAFERS WITH CINNAMON.
200g cl. beat butter with salt
1/4 st. sugar, cinnamon, pour 1 tbsp. flour, mix.
Enter 3 vzb. protein, put in a waffle iron, bake until golden brown.
